The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed phones, laptop, chargers, etc. on the prep area tables in the front of the facility. Corrected on sight. Observed numerous foods in the freezers and cooler areas through-out the facility stored open with no covering. Several raw animal foods, including, but not limited too chicken and raw eggs, were stored above ready to eat foods in the walk-in cooler. Observed numerous food ingredient storage containers, on the cook line and in the cooling units, are not labeled with the common name of the food. Food dispensing utensil in flour and sugar, observed stored in the food and not with handle above the top of the food and the container. Corrected on sight. Observed wet wiping cloths placed in various table tops, stove tops, etc., throughout the facility in the kitchen area, and not being stored in sanitizer solution. Corrected on sight. Observed several boxes of raw meat stored in large sheet trays on the floor in the walk-in cooler, rather than 6 inches off of the floor as required. Observed numerous foods, commercially processed refrigerated, ready to eat and refrigerated ready to eat food prepared in the food facility, and held for more than 24 hours, not being date marked with the opening or prepared date. Observed cooking utensils stored directly on top of the wok stove, which was not a clean surface and contaminated utensils being used. Observed single-service, single-use articles stored on the shelving at the baine marie area om the prep/cook line, which were not in the original protective package and not inverted to prevent contamination. Observed cardboard, which is not a cleanable surface, being used to line the shelving of the upright freezer units in the back area near the three bay sink. Some, not all, were corrected on sight. The hand-wash sink in the back prep area was blocked by a mop bucket and mop and not accessible at all times for employee use. Corrected on sight. Plumbing system not maintained in good repair – observed hand-wash sink in the back kitchen area leaking at the drain elbow. Mops are not being hung to air dry.

Raw frozen chicken observed thawing in standing water in the food prep sink, which is not an approved thawing method. Corrected and discussed with person in charge. Corrected. Grease hood filters above the cook line area and floors under the cook line area of the food facility are extremely dirty, dusty, and in need of cleaning or replacement/repair if cleaning is not able to be done.
