Qdoba Mexican Eats #2829, 303 Arsenal Rd. York, Change of Owner, January 4. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Bulk rice hopper doors are open and dirty mixing bowls and utensils are observed on the hopper lids exposing the foods to contamination. Corrected – dirty bowls and utensils were moved to ware washing area. Observed fountain soda syrup bag in box food stored directly on the floor in rear storage area, rather than 6 inches off of the floor as required. Corrected. Cooked grilled chicken food was held at 96°F, in the hot well located in the grill area, rather than 135°F or above as required. Corrected – 10 lbs of product was valued by Manager at $8.65 was discarded. Loose rubber door gaskets observed on the counter height freezer unit located to the left of the flat grill. Observed accumulation of frozen condensate on interior surfaces. The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was less than 50 ppm, rather than 200-400 ppm as stated on the manufacturers use directions. Provided training. Corrected – will manually mix and test for proper concentration. Fountain soda dispensing nozzles, a food contact surface, was observed to have food residue and mold like substance and was not clean to sight and touch. Corrected. Observed stove top with an accumulation of dirt, food residue, debris on non-food contact surfaces. Observed walk in cooler shelving with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces. Automatic paper towel dispenser at the preparation area hand wash sink had towels but was not dispensing. Corrected. Light shield over vulcan hot hold has a very heavy accumulation of static dust.

Weis Markets #005, 2400 E. Market St. York, January 4. Pass. Observed the lid on the rolling chicken breading container is chipped/broken on all four corners and is not in good repair or condition. Most, not all knives in all departments with food debris on the knives and the magnetic knife holders they were hanging from. Corrected on sight. Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dirt and soil. Observed all floor drains through-out the facility with accumulation of food debris and dirt build-up and in need of cleaning. Observed ice machine leaking into an overflowing rolling bin (placed under the dispensing area) and then leaking onto the floor in the produce area and is in need of repair. Old unused equipment stored in all departments through-out the facility, should be removed from food facility or stored clean in a separate area of the store.

Arby’s #6966, 2810 E. Market St. York, January 3. Pass. Ice machine deflector plate, a food contact surface, was observed to have orange mold like residue and was not clean to sight and touch. Corrected – machine emptied for cleaning. The handwash sink located in the toilet rooms does not have a self-closing, slow-closing or metering faucet to provide water for 15 seconds without reactivation. Sink can be used as is and metering faucet will be adjusted to 15 seconds or greater within three days.

China One, 2146 Palamino Rd. Dover, January 3. Pass. Handwashing sink in the prep area/ warewash area is blocked by bin of cooling pork. Corrected. Flooring in the back dry storage area under shelving has accumulation of flour and food debris and in need of cleaning. Drain at the three-compartment sink with accumulation of food debris and in need of cleaning. Spray bottles one with purple liquid and one with yellow/brown liquid in the prep area with no common name label. Corrected.

Nino’s Pizza, 1214 Greensprings Dr. York, January 2. Pass. Observed two containers of food that are not clean to sight and touch stored in direct contact with shredded lettuce inside the bain marie. Containers removed from food and cleaned food discarded. Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods (pizza) without written procedures or documentation to verify disposition of food. Corrected – Provided training, pizza’s were made at open 11 a.m. and timed accordingly. Both walk in cooler and freezer doors are damaged at the gasket areas and in need of repair. Observed frozen condensate on floor of walk in freezer from the condenser unit. Unit is leaking and in need of repair. Working containers in pizza oven area, used for storing all purpose cleaner taken from bulk supplies, were not marked with the common name of the chemical. Container labeled – provided training.

Manual warewashing equipment (center basin) observed with build up of filth and food residue and not cleaned before use, and frequently throughout the day. Utensil water well in the espresso machine area drain hose is clogged. Unit is not in use at this time. Corrected.
